Pineapple Thai Noodle Salad with Edamame Spaghetti

INGREDIENTS
- 1/2 package (4oz) of The Only Bean Edamame Spaghetti
- 1 large pineapple, halved
- 1 cup cherry tomatoes, halved
- 1 thinly sliced green onion
- 1/3 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1/2 tbsp chopped Thai chili peppers
INSTRUCTIONS
- Step 1 – Cook 1/2 pack of The Only Bean Edamame pasta according to directions on the package.
- Step 2 – In a large bowl, mix sliced pineapples, pasta, tomatoes, onion, cilantro, and mint.
- Step 3 – In a separate bowl, mix Thai chili peppers, brown sugar, lime juice, and fish sauce.
- Step 4 – Combine sauce with noodles and vegetables.
- Step 5 – Place pasta salad into pineapple boat and garnish with crushed peanuts.
